One day, I had random items in my pantry and I decided to Google just the ingredients and see what it came up with! A beautiful and easy dessert came up! Traditionally Filipino, (very far away from me) but that didn’t stop me from trying!
It’s a dessert, ode to coconut! Very easy to make, dairy free, not particular sweet, like a custard but very addictive! Much easier than buying a premade mix of some dessert! Just try it for yourself!
The funny part is that although it has a lot of coconut products, it is not overwhelming at all because there is not a strong smell or taste in the coconut products (non sweeten).
You’ll just need
1 cup rice flour
1 cup sugar
1/2 cup cornstarch
4 cups coconut milk
Pretty simple, boil in a pot the coconut milk, with the flour, sugar and cornstarch.
Have a pan and smother it with coconut oil, so that our cream won’t stick at the pan!
Boil the mixture until the consistency is as you like it to be, firm enough but don’t over boil it because then you have to clean the pot from the burned milk!
Then, empty the content to the pan and sprinkle toasted coconut flakes ( you can either buy it toasted like me or just do it yourself quickly in a small pan )
Your result will look like this
Just let it cool down for a half and hour and place it on the fridge for as long as you like, better serve cool!
