When I stroll at the supermarket, I get really angry when i see premade mixes of things that are so easy to make and more tasty if you make it yourself, like cake mix, brownie mix and my favourite pancake mix.

Since i leave restrained in a little island, with no influence from nearby countries, I have the internet as my guide (and movies, don’t forget tv shows). I always liked in the movie, where I see people eating enormous amounts of pancakes in restaurants and mommies making them at home, so i decided to make them on my own, just following instructions from various sites and combining them for better results. The plain version i like the most is consistent of the following ingredients

3/4 cup milk

2 tbs melted butter

1 egg

1 cup plain flour

2 tsp baking powder

2 tbs sugar

1 banana

Put a frying pan in high heat and add some butter. Let it get really heated and then as soon as you add your first pancake , just reduce the heat in half.

Combine all the dry ingredients in a bowl and then in another bowl combine the milk with butter, egg and banana! Stir really well and then gently fold with the dry ingredients.

Don’t over stir it. The consistency of the batter will be almost like a more firm cake. Get a tablespoon and poor a full spoon in the pan. You can tell if one side is cooked, if at the top has little bubbles, then it’s ready to flip. You can make nearly 8 pancakes with this recipe, but the most important detail for me is tha temparature of the pan to not be high otherwise you will end up with burned pancakes. They are eatables but not pretty.

When all the pancakes are ready, you can choose the topping of your like but they are yummy with maple syrup, golden syrup or plain nutella!
