Chocolate Coconut Cupcakes (dairy free, gluten free)

There are various recipes to make something this beautiful and when I first read the recipe, I was, of course! It’s so simple so why i kept buying bounty chocolates all the time as a kid! Man, one day I will a child really happy with all the recipes I learned the last year.

As always, my brother was my inspiration, being vegan, me not so much ( I love bacon!) but I don’t mind tasty treats.

2 packs of dark chocolate
1/2 cup coconut oil
1/4 cup dry unsweetened coconut flakes
1 tbsp sugar
Basically, get 12 paper cupcakes and place them in a cupcake tin to stay at form. Melt one pack of chocolate and smear the bottom and sides of the paper cupcakes one at a time. Place the tin at fridge for good 10 minutes till the chocolate hardens.
While waiting, prepare the stuffing. Mix in a bowl the coconut flakes with the oil and the sugar until it becomes a thick paste. Be very quick now and while the chocolate covered paper cups are still hard, place a teaspoon of the fiilling and press firmly to airtight the filling and place them back to the fridge. Because the amount of chocolate on the paper cup is very thin, it melts only by touch so make the filling in doses.
Melt the rest of the chocolate and put a spoonful on each cupcake to completely cover the top. Place them again on the fridge and try not to eat them all at once
