My baby’s breakfast v.2

My baby is probably teething again, the last 4 teeth, and we are done! He doesn’t sleep for a week now, none during the day and very little during the night! I love coffee, but as a beverage, not as a necessity. So A variation, of the previous snack/ breakfast for my baby is a whole peach (since they are in season), a banana, half cups of puffed oats, couple of dried blueberries and2 tbsp of Greek yogurt!

My baby doesn’t like milk. He hates milk, like each time I try to feed him, he screams bloody hell. So, After 2-3 hours of trying to drink his, I feel I have to give him something good. So, my go to snack is Greek yogurt, puffed oats, a banana and any kind of berries. Normally, I use dried ones, but this week I found fresh berries and he love them. Blackberries those is, raspberries was bit sour for his taste, so I added a bit of honey and was good then! Nut Butters

So, I made a simple and honest mistake during Christmas time! I don’t drive, so I have to depend on others to get somewhere or even get my groceries! So, I texted a small list with various nuts to my father, to get for me. I was cheap, not going to lie, so I send him minimum instructions. I wanted to be a little more “healthy” so I told him at the end of the text, all the above are raw and unsalted. I simply meant unsalted, for nibbling reasons! Guess what, they were horrible! I got like 1 pound of peanuts that were bitter and inedible, for me at least!. So, i just thought, I’ll bake them and make peanut butter. So, I roasted them, I cleaned them from their peel (one by one, I may add). I had no idea because of the peel if they were done, so of course I overcooked them a bit. Not much, a bit! So, I put them on my blender and simply add some salt. Not much, a pinch. I made a full big jar. It’s a nice full-taste peanut butter.
Again,the next day i thought, hum, I have 2 cups of pistachio. I looked it up and guess again! You can make butter from all nuts! I found a recipe stating to simply add 2 tsp lemon juice and 2 tsp oil to the pistachio. I didn’t noticed the part about the oil, until after I stored the pistachio butter… Ops!
So I decided to do exactly the same with the pistachio as my peanuts. They were roasted, didn’t smell as roasted peanuts did and i couldn’t for the life of me get them to peel. So I said, who cares! I had a real hard time to grind them (because of the lack of oil) but in the end, I had a really small jar of this butter! Not smooth though. My “good butter” because it’s very expensive (check the prices)!

Turtle Cookies

I have finally acquired pecans! Yeah! I realised that most people don’t like even walnuts in their desserts (aka my husband) and I try to sneak them in!
One of my dearest friends, received a very successful badge of chunky white chocolate cookies and she said that they were great but.. she would prefer some cookies of a well known brand that you can buy from the supermarket. I said I would try to copycat them!
It would be simply, their main ingredients are pecan, chocolate caramel! I surfed away for a night and came with two similar recipes. A chocolate turtle cookie and a plain turtle cookie!
By the way, the plain ones won by far, for some really weird reason. The chocolate ones are more pretty, more store bought by they don’t have the same taste like the plain ones! Who knew!
The recipe for the Turtle Chip Cookies makes 13 cookies and the Chocolate Turtle Cookies makes 14 cookies! You may find the measurements odd but I had to divide them, who many cookies does a couple needs after all? I have to add they lasted almost 2 days until I had none!
Let’s go! for the plain ones, you will need

6 tablespoons butter softened
3/4 cups brown sugar
1/4 cup sugar
1 egg
1/2 tsp teaspoon vanilla
1/8 tsp teaspoon baking powder
1/4 tsp baking soda
1/8 tsp salt
1 1/8 cups ap flour
1/4 cup chocolate chips
1/4 cup caramel bits
1/4 cup crashed pecan
Like always, mix the butter with the sugars until fluffy! Add the egg until it is fully incorporated. Add the dry ingredients until you have a uniform mix. Add manually the chocolates, caramel and pecan lightly! Leave the mix at fridge until you make the next badge!
Spoon the dough and cook for 10 minutes. It will be very soft to transfer at first, but have faith, don’t overcook them! In 5 minutes transfer them to cool completely!
Recipe for Chocolate one
1 1/4 cups ap flour
1/2 tsp baking soda
1⁄8 tsp salt
1/3 cup Dutch processed cocoa
1/2 cup unsalted butter
1/2 cup granulated sugar
1/2 cup light brown sugar
1 large eggs
1/2 tsp vanilla extract
1/2 cup semi-sweet chocolate chips
1/4 cup chopped pecans
1/4 cup caramel bits
Exactly like above, only difference is that the cookies are going to be more in shape, because of the cocoa thus more cookie like!

Strawberry Extract

So, I had my uncle coming for a visit the other day and I had baked 2 different kind of dozens of cookies for him since he is a chef and I wanted his opinion. But he brought my cousin and her children and he got a chance to taste only one cookie…
He brought me strawberries from his garden. Than means organic bio etc all things good. I don’t like fruits, I try really hard to incorporate fruits in my desserts but I don’t like them!My pediatrician used to tell my mother to at least let me drink fruit juices to get any kind of vitamins. Since then, I always drink juices, without pulp of course.
Last year I discovered I liked smoothies! I found a couple of recipes, (not creative enough) and made them for my husband and I! I discovered I like mango, strawberries, banana, pineapple and few others. Don’t like anything with pits. Whatever! If I don’t clean and prepare the food, my husband won’t eat any healthy thing! His mama taught he that!Can’t change a 32 year old man. So, since I don’t want anything to go to waste, I decided to make a very easy and simple strawberry extract/ syrup thingy!
The recipe says, in a pan to boil 1/2 a kilo of strawberries cut in 4 with 1 cup of water and 1/2 cup of sugar. After it starts to bubble, get a cheese cloth and drain the liquid and place it back on the pan.

Let it reduce the liquid by boiling it slowly.

As you can see, it get’s really little quantity! It smells divine! How much strawberry syrup does 2 people need? It’s for food people!

It has the most dark red color I have ever seen and without any “outside” help!

You have to leave it for a couple of hours to cool completely and them “supposedly” it lasts for 2 month on the fridge. It’s summer, get yogurt ice cream and pour it over!
