My baby’s breakfast v.2

My baby is probably teething again, the last 4 teeth, and we are done! He doesn’t sleep for a week now, none during the day and very little during the night! I love coffee, but as a beverage, not as a necessity. So A variation, of the previous snack/ breakfast for my baby is a whole peach (since they are in season), a banana, half cups of puffed oats, couple of dried blueberries and2 tbsp of Greek yogurt!

My baby’s breakfast

My baby doesn’t like milk. He hates milk, like each time I try to feed him, he screams bloody hell. So, After 2-3 hours of trying to drink his, I feel I have to give him something good. So, my go to snack is Greek yogurt, puffed oats, a banana and any kind of berries. Normally, I use dried ones, but this week I found fresh berries and he love them. Blackberries those is, raspberries was bit sour for his taste, so I added a bit of honey and was good then! Nut Butters

So, I made a simple and honest mistake during Christmas time! I don’t drive, so I have to depend on others to get somewhere or even get my groceries! So, I texted a small list with various nuts to my father, to get for me. I was cheap, not going to lie, so I send him minimum instructions. I wanted to be a little more “healthy” so I told him at the end of the text, all the above are raw and unsalted. I simply meant unsalted, for nibbling reasons! Guess what, they were horrible! I got like 1 pound of peanuts that were bitter and inedible, for me at least!. So, i just thought, I’ll bake them and make peanut butter. So, I roasted them, I cleaned them from their peel (one by one, I may add). I had no idea because of the peel if they were done, so of course I overcooked them a bit. Not much, a bit! So, I put them on my blender and simply add some salt. Not much, a pinch. I made a full big jar. It’s a nice full-taste peanut butter.
Again,the next day i thought, hum, I have 2 cups of pistachio. I looked it up and guess again! You can make butter from all nuts! I found a recipe stating to simply add 2 tsp lemon juice and 2 tsp oil to the pistachio. I didn’t noticed the part about the oil, until after I stored the pistachio butter… Ops!
So I decided to do exactly the same with the pistachio as my peanuts. They were roasted, didn’t smell as roasted peanuts did and i couldn’t for the life of me get them to peel. So I said, who cares! I had a real hard time to grind them (because of the lack of oil) but in the end, I had a really small jar of this butter! Not smooth though. My “good butter” because it’s very expensive (check the prices)!

Peanut butter cookies

So, here we go again! Once more, being a mom is totally hard and rewarding work! I mean, my baby seriously dislikes sleep. He sleeps 40 minutes during the day and keeps waking up 5 to 6 times and he is 14 months. I’m sleepless and working on my master with my husband and I want to drink coffee all day long! So here is simple recipe, not something special but I was surprised that it turned out so well!

Ingredients
1 cup peanut butter
3/4 cup sugar
1 large egg
1/2 teaspoon baking soda
1/4 teaspoon salt
1 cup chocolate pieces

It’s a basic flour less recipe. You mix everything up, and save last the chocolate bits. You make small balls with 2 tablespoons and place them on the baking sheets. It takes about 13 minutes in 180 degrees. Leave them to cool completely! The mix seems a bit off but it will turn out great!

Strawberry Ice cream!

Hi! It’s been a while, I have an almost great excuse for my absence!But, enough about that! So, my husband returned home the other day and brought me a small case of strawberries, that somebody gave them to him. We had just bought some from the supermarket, since they are all over the place and are pretty cheap! Last year, when my uncle gave me a bag from his garden, I made them into an extract/ syrup which was great, and my husband fully ate it!I don’t like fruits! I can stand a few of them, but I seriously dislike enough of them because I hate pits and seeds!You know like there are a million in strawberries! I have a huge problem with melon and I can gag real bad! Imagine the possible fruits (and vegetables) I can’t eat! Figs, and okra. So, I can’t stand a strawberry but not many of them. I had to use them, I don’t want to waste anything, even if it’s free. So, strawberry ice cream it is (and another batch of the strawberry syrup)!
You will need,
3/4 cup full fat milk
3/4 cup heavy cream
2 tsp golden syrup
A big cup of strawberries (you can use as many as you like)

Warm the milk, cream and the syrup in a pan. Smash the strawberries (I used the blender) and add them to the mix! Let it cool completely and use your ice cream maker (20 minutes)! the result is really fruity, not sweet at all, so use more syrup if you want a more sweet flavor. It has nothing to do with the store bought pink ice cream, so I think it’s a smart way for kids to get accustom to a taste more close to the fruit!

As always, Place the container in the fridge like a half an hour before eating it to get it more soft so that you can scoop it nice. Or, before you start eating your meal, place it in the fridge so when you are ready for dessert it will be very easy and not solid!
